Tortellini with Sun Dried Tomatoes & Parmesan

  • 20 oz pkg of tortellini
  • 1 lb grilled chicken cut into strips
  • 1 lb of zucchini sliced
  • ½ -1 c sliced Sun dried tomatoes (not packed in oil)
  • 3/4c Sun Dried Tomato Parmesan and Garlic Extra Virgin Olive Oil
  • Handful of grated parmesan
  • Italian Seasoning
  • Salt and pepper
  • Chopped parsley

Marinate the chicken in ¼ c of the Sun Dried Tomato Parmesan and Garlic Extra Virgin Olive Oil, Italian seasoning and salt and pepper. Let it marinate for at least 30 minutes. Then grill it until cooked thoroughly. Set aside, but keep warm.

Cook tortellini according to package directions. While the pasta is boiling sauté the zucchini in ¼ c of the Sun Dried Tomato Parmesan and Garlic Extra Virgin Olive Oil, Italian seasoning and salt and pepper to taste. Add in the sun dried tomatoes towards the end of cooking. While that is cooking cut the chicken into bite size strips.

Drain the pasta and put in the large serving dish. Add in the zucchini, chicken, parmesan ( a handful or 2), parsley, 1/4c Sun Dried Tomato Parmesan and Garlic Extra Virgin Olive Oil ( more if needed) and season to taste with salt, pepper and Italian seasoning.
